It is my understanding that the constitution confers birthright citizenship. If somehow this was nullified (there's probably a better verb), would this apply retroactively to adults born in the US? How exactly would the cutoff date be determined?

This completely depends on how it were to be removed.
There are approaches that would be retroactive.
There are approaches that would be only prospective. E.g. the January 20, 2025 Executive Order says the operative section "shall apply only to persons who are born within the United States after 30 days from the date of this order."
The "cutoff" date, if there were one, would also depend on the particular approach.
