I want to switch from Windows to Linux soonTM and I wonder how does Linux handle multiple storages.

I have 1 m.2, 1 older sata and a very old HD. Can I simply install Linux on my main m.2 and that's all or do I need to do something else?

Yes, you can install Ubuntu on your M.2 disk.

However, you might also need to set the boot order in BIOS/UEFI, so that the computer boots from this disk by default.
